Seared Shrimp Salad with Lime Leaf Dressing

Thanks to the complex and layered flavors of NAGA lime leaf dressing, you will be looking forward to eating vegetables. You can sub the shrimps with other proteins like grilled chicken breast or boiled egg or even fried tofu!

Ingredients (2 servings)

for marinating the shrimps:

  • 8 oz shrimps, peeled and deveined
  • 2 tbsp olive oil
  • 2 garlic cloves, minced
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • pepper to taste
for the salad: 
  • 6 oz salad greens of choice
  • 6 oz grape tomatoes, halved
  • 1 medium cucumber, thinly sliced
  • 1 medium ripe mango, cubed
  • 1/4 cup pine nuts
  • 2 tbsp. NAGA lime leaf dressing

Recipe

for seared shrimps:

  • In a medium bowl, combine the shrimp, olive oil, garlic, salt, and pepper and let it sit for 15 minutes. 
  • Heat a sauté pan over medium high heat and add the shrimps in batches, without overcrowding the pan. Sear the shrimps for 1 minute on each side until opaque and cooked through. Remove from pan and cool down.

for the salad:

  • Prepare all the vegetables and add them to a large bowl. Toss together with seared shrimps and lime leaf dressing. Transfer to a serving plate and top with pine nuts.
